Recipe: Simple Avocado and Tomato Salad



This is a quick and easy salad to prepare that uses just a few key ingredients; Juicy plum tomatoes, creamy avocado, and tangy lime juice. This dish can serve as main meal or side dish.


Avocado does not well with refrigerating.  So if you are not eating it immediately, wait to add the avocado until just before serving.


Simple Avocado and Tomato Salad

Ingredient

Ripe plum tomato, 1-2 chopped
Ripe and firm avocado, 1 peeled, pitted and diced
Red (or white) onion, 1 small sliced or diced
Juice of 1 lime
extra virgin olive oil (Canola oil would do), 1/2 -1tbsp
Black pepper, dash or 1/4 tsp
Salt to taste


Directions

Arrange the diced tomato on a large bowl, next add the diced or sliced onions, and avocado dices. Drizzle with the lime juice and the extra virgin olive oil.Sprinkle with pepper and salt to taste. Enjoy!
