Recipe: No Cheese Cauliflower Frittata

I have been quite busy these days and there's demand for recipes  meals I post on my Facebook page. I will try my best to blog them all.

Frittata is a staple dish originating from Italy, an egg-based meal with cheese as a key ingredient. I wanted a meal I can eatwhole not side, so I made mine without cheese and yeah, less calorie! This recipe is a hearty high-wow, low-difficuly dish enriched with various ingredients and can be eaten as breakfast,  lunch or dinner.


If  you are not that into cauliflower, try broccoli or even spinach.

No Cheese Cauliflower Frittata


Serving: 1
Calorie - 350;

Ingredients:

200g cauliflower, sliced or split it into florets
2 eggs
1 small green bell pepper, chopped
1/2 of small chili red bell pepper, chopped
2 tbspn green beans, chopped (about 5 pods)
1 celery stalk, chopped
20g spring onion, chopped(includes tops & bub)
1/2 tspn paprika
1 small-meduim tomato, diced
1 tbspn canola oil
salt and black pepper to taste

Directions:


Preheat oven to 180°C.

Break the eggs in a bowl. Add salt and black pepper and whisk till blend.

Heat oil in a meduim non-stick oven-safe fry pan over medium heat. Add, cauliflower, spring onion, green bean, bell peppers, tomato and celery. Sautee for 2-3 minutes,  add black pepper,  paprika and salt and  cook, stirring often, for 2 minutes or until cauliflower is about wilt .

Pour whisked egg mixture into the fry pan and reduce heat to low and cook until the the edges are set.

Transfer the fry pan into the oven and bske till the ftittata is completely set and cooked, 5-8 minutes. Remove the frittata from the oven and transfer it on a large plate.
