Cloud Bread Pizza

 
I love pizza and who doesn't! Make a pizza that could fit into low-carb diet. So I present you with today feature  recipe, Cloud Bread Pizza!


Cloud bread is huge at the minute, its light , easy to make and I think it makes the perfect base for a healthy pizza. I tried this cloud bread pizza, recipe a few times,  to (try) prefect it before I posted it. The first attempt, it  tasted a bit bland, so I,ve added loads of Italian flavour,s to the base, also I think leaving the base in the oven for and hour with the oven off, is vital if you don,t want  (in the words of Mary Berry) a soggy bottom.. And lastly its really important to use grease proof paper.. (or else you may end up with scrambled eggy bread (ahem.. that didn’t happen me).

“Yum” loved cloud bread pizza, “One yummy daddy” brought some to work for lunch (i,ll not tell you what the rest of the lad,s said to him”) its not the most manly lunch is it..   as always I think it’s a great alternative to a takeaway if you’re trying to stick to a healthy diet.. eat it cold or the nest day as it tastes a million times better.

Any of you Slimming world guys this recipe for cloud bread pizza is free using Quark. (that,s a whole pizza). Using the cheddar cheese as your healthy extra a..  with all your free favourite toppings.

Ingredients

For the base
4 eggs (egg white and yoke separated)
teaspoon of white vinegar
90 g of cream cheese/ or quark on sw
1 crushed garlic clove
1 table-spoon oregano
1 tablespoon basil
Grease proof paper is really important

For the toppings 
a tablespoon of tomato puree
30g  grated cheddar (if using it as healthy an on sw) if not a good hand full of grated of cheddar
and your favorite toppings.. We like ham, peppers and I like mushrooms and chili (yum doesn’t) but you can do half and half

Method

  • Preheat oven to 150c.
  • Get a pizza tin (I don't have a pizza tin so I use a Quiche tin ) and line it with grease proof paper (it,s important to line it).
  • Separate eggs whites in one bowl,  yolks in another one.
  • Whisk up your egg whites with the vinegar with an electric mixer until you get stiff peaks.
  • Blend the cream cheese/quark with a hand blender with the egg yolks. Also add the crushed garlic, basil and oregano to the yolk mixture.
  • Add the yolk mixture in table spoons to the egg whites and mix with a butter knife, mix it as lightly as you can.
  • Using a large metal spoon add your mixture to your lined dish.
  • Put in the oven and cook for 30mins.
  • Turn the oven off but leave the base in the oven for another hour.. this cooks the inside without burning it.
  • Cloud bread pizza tastes so much better the next day or when cooled down (eaten when hot they have a meringue like texture. it completely changes in consistency when cooled down also another sprinkle of oregano is nice but optional.with the tomato puree. Add what ever pizza toppings you like and finish off in the oven at 180c for around 10mins until cheese is melted. 
  • Remove it with your grease proof paper.
