What to do with over-ripe bananas?




Don't just toss that over-ripe bananas! With few minutes prep work, they can be transformed into a healthy cookie made with just two ingredients! Mashed over-ripe bananas and oatmeal. OMG, these super are healthy!

I think these cookies are a good breakfast (or healthy treat!) for whoever you are. That is unless you are allergic to banana or oats...

Banana and oats go well together to make easy cookies that are tasty like banana bread. Diary free, egg free, gluten free (use certified GF oats), veahan, vegetarian, kid friendly, snack on the go... what else can I say?!
If you are on Weight Watchers; each cookie is 1 points plus. Quick breakfast on the go; 5 cookies and a piece of fruit, 5 point plus! 










Ingredients

  • Over-ripe bananas, mashed (but you can use medium ripe ones too)
  • 1 cup of uncooked quick-cooking oats
  • If desired you can add in one or more of the following ingredient mentioned below.

 Directions:


  • Preheat oven to 170°C.  Spray a non-stick cookie sheet with cooking spray or oil  the baking trsy or use a Silpat


  • Combine the mashed bananas and oats in a bowl. Fold in the mix-in(s) of your choice (if using) and place a tablespoon of each on the cookie sheet.


  • Bake 15 minutes. Makes 16 cookies.



Bonus:

1. Since all bananas are different sizes, the riquired measurements can vary. If it seems too runny, the cookies would flatten out too much. Thus, add in more oatmeal.

2. The possibilities are endless with these little bites! Try adding in some of the following to make it your own:
  • vanilla beans
  • vanilla extract
  • chocolate chips
  • peanut butter chips
  • peanut butter
  • roasted peanuts
  • nutella
  • butterscotch
  • dried cranberries
  • raisins
  • blueberries
  • chopped almond, walnut or pecans
  • cocoa nibs
  • coconut flakes
3. For weight watchers, leave the nuts out, they are still 1 point each. Replace the nuts with mini chocolate chips... still 1 point. Make these today!
